Provins is one of the best-preserved medieval fortified towns in France (UNESCO World Heritage) — 12th-century ramparts you can walk the full length of, the Tour César keep, underground galleries, and a genuinely sleepy, uncrowded old town on weekdays. Leave mid-morning. Walk the ramparts (2.3 km of walkable medieval wall), climb the Tour César for the view over the Brie countryside, wander the Ville Haute's half-timbered streets.
